You should be able to use your projector instead of a TV to view your video content provided that your projector has an HDMI input. However many projectors have various control protocols that Control Center may not be able to send reliably.
If you find that your projector won't turn on or off reliably using the Control Center remote, you may have to rely on the projector's remote for that functionality.
